Protein stabilization, also known as heat stabilization, is a winemaking process to minimize the risk of protein instabilities that show visual abnormalities in the wine. While the presence of protein instabilities do not typically hurt the taste of the wine, consumers may not find them visually appealing. Several winemaking practices or processes can lead to a higher risk of protein instabilities post-bottling. But, winemakers can optimize their winemaking processes to minimize protein instabilities in their wines.
